Good morning!
Even though many people cool off on soup during the summer, I’m cooking as much soup as I ever have. Partially because I’m testing recipes for the fall and Souptember. And partially because I’ve just been in such a soup mood lately.
The irony of hot soup, of course, is that it’s absolutely amazing with summer’s fresh produce, even as people are reaching for the A/C switch and extra large iced cold brews.
But maybe you’re feeling soupish, too, so today’s new soup is a corker of a recipe featuring late spring’s broccoli (and lots of cheese).
I can’t believe July 4th is just around the corner, so I’m gearing up for that, both with recipes and mentally, as I’m not sure my brain has fully exited winter yet. Even as this massive “heat dome” settles in over the country. In June 😱 (com’on, it’s still meteorological spring!).
This week's new soup is a cozy twist on a classic: Broccoli Cheddar Gnocchi Soup. All the flavors you love in a broccoli cheese soup with pillowy potato gnocchi soaking up the cheesy goodness.
This isn’t specifically a summer soup — I’d say it’s an all-season soup that can slip seamlessly into any time of year. I had it earmarked for fall, but couldn’t wait.
If you’re feeling soupish, too, here are a few more recipes that are great for early summer, just as tomatoes and peppers and zukes and corn and onions and garlic are about to start coming into season.
Summer Minestrone (hot soup)
Fresh, summer vegetables make the best soup! Summer Minestrone is loaded with the best veggies from the farmers’ market, and brightened with the citrusy flavors of lemongrass and ginger.
Yellow Gazpacho (chilled soup)
This vibrant soup is vividly yellow but actually mirrors the flavors of traditional gazpacho; I'm simply using all yellow veggies. It's beautiful and unexpected, and absolutely delicious chilled. And if you can find edible flowers for garnishing ... just outstanding.
BLT Soup (hot soup)
This recipe was actually the start of my fascination with turning non-soup foods into not-weird soups. I first posted it back in 2011, which seems impossibly long ago, and updated it a few years ago. Like a well-written TV show, it still holds up today with bright flavors that just shout summer.

Oh my goodness!!!! I am such a broccoli soup addict! I make it every other week! I often toss in some potatoes, or even some rice because this carb loving gal figures why not! I can't believe I never thought of gnocci! But, of course, you did, our soup queen! You are the best! Hope you are feeling well!
